Okay... *deep breath* here goes.
MercMuffin: To maximize framerate,
check this page. Some of the best things you can do are avoiding the caverns, atomsmashing unwanted items and killing off useless dwarves (GOD fappING DAMN IT THIS WHOLE IMMIGRANT WAVE WAS MILKERS AND THRESHERS AND CHEESE MAKERS [though it can be more useful to draft them or turn them into haulers]), turning off weather and temperature, and reducing the GFPS cap to 20.
As for acquiring iron, there's several ways you can go about this. First off, hematite and limonite are also iron ores. Failing that, you can always trade for iron and bronze bars from humans and dwarves, and steel from dwarves. You could even try buying all of a caravan's metal items (armor, weapons, random furniture and toys) for melting provided your craftsdwarves' output of goods is high enough. Though this can get rather wood burning intensive, so you might want to trade for logs too, unless you're planning on starting a war with the elves because of your lumber industry... though they're incredibly useless most of the time. Usually their trade goods consist of useless clothing and wooden armor, and some berries. Sometimes though, if their civilization is in the right area, you can get REALLY GOOD tamed animals. This one time I had a fortress guarded by tamed giant eagles thanks to the elves.
Griffin: When you make it fullscreen you have to zoom in using the mouse wheel. You're welcome.

Like I said to DFDelta, I'd be happy to help you learn. Just with a more direct form of communication. It's way more helpful to have a personal guide, rather than a guide you have to read.
Edit: fapp this, I'm making a DF thread.
